Maple Bacon Grilled Georgia Peaches


3 large ripe Georgia peaches (or peaches from where you live), peeled, halved and pitted
1/2 cup maple syrup
1/2 cup dark brown sugar
1/2 stick unsalted butter
1 ounce dark rum
Homemade (or best quality you can find) peach ice cream
4 strips of thin bacon, fried until crispy and crumbled

Steps:

Heat coals (or gas grill) to medium heat.

Place peaches on grill flat-side down and cook until fruit has grill marks and is charred, about two to three minutes.

Combine remaining ingredients in small sauce pot over medium heat. Stir frequently and heat until smooth.

Drizzle mixture over peaches and remove from grill. Plate and put a scoop of ice cream with every peach. Drizzle cream lightly with mixture and sprinkle bacon crumbles over top. Serve immediately.
